The Corson Building Finally Opens

After much anticipation the charmingly tiny Corson Building has officially opened its doors. Set off of Airport Way in Georgetown, this 1910 building with a terra cotta tiled roof has been remodeled with great care. And it's gorgeous. (Down to the bathroom.) From the still-mossy statue out front to the roost of doves and chickens out back, I was charmed. They're even working on a patio, though outdoor seating will come later.

Wylie Bush (of Joe Bar) showed a crowd of gawking foodies around the lofty, high-ceilinged space, while Matt Dillon (of Sitka and Spruce, recently named one of the Best New Chefs by Food & Wine Magazine ) was busy in the open, shiny new kitchen.

Dillon mentioned a larder, where "instead of going to Whole Foods to buy duck confit and chicken stock" you can pre-order it here. I like the sound of that.

The restaurant has been open for special events (notably a One Pot dinner party, and a tribute meal for Anthony Bourdain) but it's not even been open to the public for a full week.
One seating of a locally-focused, communal, five-course dinner will be served several nights a week, reservations required. The set menu changes nightly, depending on what's available. They will accommodate food allergies and vegetarians, though, as Wylie explained, it's family-style service, so the veggies will be seated together. Perhaps this might be an option for flexitarians to consider, if they want to appreciate all five courses, and sit next to their friends.
