Juno Finally Opens

Juno, the restaurant at the new Arctic Club Hotel that was originally scheduled to open July 15th -- is set to open tomorrow.

When I caught up with chef Thomas Kollasch earlier this week, he was busy getting the dining room and bar in order:

Kollasch says the most exciting thing for him has been taking on such a large-scale culinary project in the financial district, which he says is underserved.

While a free-standing restaurant, Juno will still be responsible for all food served at the hotel, including the Polar Bar, which offers fantastic cocktails AND an absinthe fountain (!!!).

The bartender told me it's the second absinthe fountain in the city. Does anyone know where the other one is?
