You Heard It Here: Restaurant Openings on Other Blogs
Restaurant gossip from the blogs:
1. Nancy Leson announces that Ethan Stowell (Union's chef-owner) and Patric Gabre-Kidan, who together own Tavolata and How to Cook a Wolf, are opening up a third joint restaurant on 15th and Pine called Olives and Anchovies. (P.S., Nancy: Stowell may be telling you that he's not hurting for talent, but two other chefs told me differently. Where'd you think half of Spring Hill's line cooks came from?)
2. Over at the Seattle Magazine food blog, Allison Scheff reports that Smarty Pants' owners are starting up a second place on the other side of Georgetown. It'll be called Hudson and it'll be a diner.

That's why I inserted the attribution: "They haven't had trouble finding talent to staff their growing number of restaurants, STOWELL SAYS, `but I'm always looking, that's a big chunk of my job.'" And it's also why I linked to your fabulous piece on the subject in that very same sentence. I commend you for writing it.

Hey, guys -- I just want to clear up one thing that this post may appear to imply: Mark Fuller was very clear with me that he had not poached the staff from Tavolata. I simply mentioned the migration of staff from one kitchen to another because it clashed with what I'd just read -- and as an example of how very few restaurants in town seem to be immune from the staffing shortage. It's interesting who's being frank about the shortage and who isn't. I've received "thanks for being honest" emails. I've also had chefs tell me their kitchens were fully staffed, only to see Craigslist ads posted the next day, and had one restaurant tell me they weren't advertising anywhere, only to have another chef tell me that the restaurant had been posting help-wanted ads down in San Francisco (couldn't find proof, so I didn't name names).
