If you see something rolling through Seattle streets late at night that looks like a Mister Softee truck that's morphed into a giant pig, don't worry, it's not the apocalypse. It's Maximus Minimus, the latest venture from Greg Dammeier, head of Sugar Mountain (which owns Beecher's Handmade Cheese, Bennett's Pure Food Bistro, and Pasta and Co.). The vehicle will soon be hanging out on the corner of Second Avenue and Pike Street, serving pulled-pork sandwiches.

Dammeier is aiming for a June 4 opening, depending on when the pig is ready. Designer Colin Reedy, who has created several of the Pigs on Parade, is working on converting a truck into a Skillet Street Food-style emporium that will offer two choices--maximum (spicy) or minimum (tangy or sweet)-- for everything from the barbecue sauce and slaws to the drinks (either a tart, gingery lemonade or a sweeter hibiscus tea). Evenings, the pig will most likely be on the move, catering to the late-night bar crowd. Dammeier tells us they're working on an iPhone application that would let users vote for the location they want Maximus Minimus to end up, or to see what direction they need to head if they're hankering for a pork sandwich.
