The Early Word: The Skillet Walk-Up Window
It's gone legit -- er, at least easier to find. The Skillet Street Food walk-up window opened up on the corner of Fourth and Main streets on July 14. Open from 8 to 10 a.m. for breakfast and 11 a.m. to 2 p.m. for lunch every weekday, the window serves the standard Skillet menu, ranging from cornmeal waffles with braised pork belly in the morning to the famous burger at noon.
If Fourth and Main seems like an odd location for a permanent location, it's because the window -- no chairs or tables -- serves double duty. The health department requires every mobile vendor has to have a "commissary," or permanent, department-inspected commercial kitchen where it prepares food. Most of the mobile vendors in town, as well as many caterers and small food manufacturers, rent space in shared commercial kitchens. With the window, Josh Henderson can have his own commissary for his growing fleet of Airstreams and make money on the side. 
Comparing the new menu to a recent photo of the truck on the West Seattle blog, looks like Skillet's bumping up the prices even higher -- 50 cents for the burgers and sammies, $1 for the poutine. Not bad considering the ingredients, and the fact that the steak sammy with chimichurri (parsley pesto) and roasted peppers was as good as everything I've had from the trucks to date -- but I have to say, for those prices, I'd rather the view of the alfresco dining area were a little more scenic.
