Super Bowl Snacks Without Gas Attacks

With tongue firmly planted in cheek, chapters like Breakfarts and Sneaky Snacks and Appetooters include recipes adapted to reduce the unwanted side effects. Side bars include warnings about top offenders like eggs, chicken and cheese.
In the following recipes, the adaptations are minor. In the Fartichoke Dip, just grate the parmesan yourself, rather than buying the pre-grated version. For the guacamole, look for California avocados instead of ones from Florida. Mix up these dips for Super Bowl Sunday and eat without fear.
Fartichoke Dip
1 cup mayonnaise
14 oz marinated jar artichokes
1 cup fresh grated parmesan cheese
Tortilla chips
Stuff to do:
Preheat oven to 350 degrees F
Mix mayonnaise, artichokes, and parmesan cheese in an oven-ready or casserole dish until smooth.
Bake until golden brown
Remove and serve with tortilla chips
Holy Guacamole
3 California avocados - peeled, halved and seeded
1 lime - juiced
½ tsp. kosher salt
½ tsp. ground cumin
½ tsp. cayenne
½ medium onion - diced
2 tomatoes - seeded and diced
1 tsp. chopped cilantro
1 clove garlic - minced
Stuff to do:
Place the scooped avocado pulp and lime juice in a large bowl and toss to coat.
After all of the avocados have been coated, drain and save the lime juice.
Add salt, cumin and cayenne to the coated avocados and mash with a potato masher.
Fold in the onions, tomatoes, cilantro, and garlic.
Add 1 tablespoon of the saved lime juice. Let sit at room temperature for 1 hour, and then serve with your favorite chips or crackers.
