Though Washington State doesn't have a signature condiment like our syrupy friends in Vermont or those tangy Texans with all their bold BBQ, we do have several business taking a dip into saucier enterprises. Packed with local ingredients and a ton of talent, here are five local condiments guaranteed to pack the side of your refrigerator door with maximum flavor capacity:

Salsa de Rosa

From pleasantly mild to spicy & wild, Salsa de Rosa caterers its flavors to an array of Northwest palettes. Simmer with chicken thighs and serve over rice for a simple week night supper.

Mac Daddy Mac 'n Cheese Sauce
Volunteer Park Café and Market Place (1501 17th Ave E)
This homespun jar of cheesy goodness is so popular you need to call ahead and see if it is in stock before you hit their Capitol Hill storefront. Mac Daddy is of course meant for noodles, but could also serve as a dreamy "wiz" on a Philly-style Cheese Steak sandwich or a lazy fondue with baguette chunks.

Bistro Marionette
This local treat created by chef Robert Haugland is so flavorful I made a second, shameless trip through the sample line just for a another dollop on some French bread. Its suggested uses on green beans and in mashed potatoes make it even more alluring. BBG is also the ultimate white pizza sauce. You can find it at Metropolitan Markets, West Seattle Thriftway and Ballard Market.
